Gazpacho

What better way to enjoy a comforting soup while still remaining cool in the scorching summer months? This cold soup is exotic and flavorful, and the perfect thing to make right after your move to Columbus.

Ingredients:

1 1/2 pounds vine-ripened tomatoes, peeled, seeded and chopped

Tomato juice

1 cup cucumber, peeled, seeded and chopped

1/2 cup chopped red bell pepper

1/2 cup chopped red onion

1 small jalapeno, seeded and minced

1 medium garlic clove, minced

1/4 cup extra-virgin olive oil

1 lime, juiced

2 teaspoons balsamic vinegar

2 teaspoons Worcestershire sauce

1/2 teaspoon toasted, ground cumin

1 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

2 tablespoons fresh basil leaves, chiffonade

Directions:

Boil 6 quarts of water on high. Slice the tomatoes and add them to the pot for fifteen seconds, and then transfer them to iced water. Peel and seed the tomatoes, and then strain them for the juice. Add extra tomato juice until you have a cup of it. Add the rest of the ingredients except the basil to the mix, and then blend them all for 15-20 seconds. Cover and chill for about two hours, serve with basil, and enjoy your first meal in your new home after your move to Columbus!
